In a large skillet over medium heat cook the ground pork, chopping finely until cooked through.
In a large bowl combine all other ingredients and mix well. Add pork and mix well (with your hands if necessary). Cover and allow to sit for at least one hour for best flavor. Great when made a day ahead!
Preheat oven to 375°. Place all vegetables in a large roasting pan, sprinkle with rosemary, and drizzle olive oil over all, salt and pepper. Stir well and place in the oven for 20-30 minutes, stirring once or twice.
